Creamy Garlic Avocado Pasta

 

 


 


Ingredients:
-1 large avocado
-1 or 2 cloves of garlic (depending on how garlicky you like things)
-1/2 lemon
-2 tablespoons olive oil or smart balance butter
-Angel hair pasta
-Salt & Pepper


Method:

1. Bring large pot of water to boil and cook pasta in heavily salted water.

2. In a medium bowl, mash the avocado with a fork until completely smooth. Smash the clove(s) of garlic in a garlic press or use a fine grater/micro plane. It is very important that the garlic is turned into a paste, not just chopped or minced in chunky pieces. Squeeze in the juice of half of a lemon. Stir in olive oil or smart balance butter, I used a mixture of the two. Add salt and pepper to taste.

3. Strain the cooked pasta and toss in the sauce mixture and enjoy!
