Mexican Style Salad with Cilantro Lime Dressing

Ingredients:
-1 avocado, sliced
-1 sweet pepper, chopped
-1 tomato, chopped
-1/2 large cucumber, peeled and chopped
-1 cup prepared easy Spanish rice
-1 can black beans, drained and rinsed
-1 cup frozen sweet corn, defrosted
- romain lettuce
- baby spinach
- 2 flour tortillas, cut into small squares and fried
Cilantro lime dressing:
-1 lime, juiced
-1/2 cup cilantro, finely chopped
-2 tbsp green enchilada sauce
-salt & pepper
- olive oil
-1 tsp sugar

Method:

1. Prepare dressing, combine cilantro, lime juice, olive oil, enchilada sauce, salt & pepper, and sugar in a container with a lid. Shake together for a few minutes and set aside.

2. Cut up tortillas, fry in oil for about 30 seconds.

3. Prepare easy Spanish rice:
In microwave safe-covered dish combine 1/2 salsa, 1/2 green enchilada sauce, and 1/2 cup white rice. Microwave on high for 6 minutes until it comes to a boil, then microwave on low for 15 minutes and let stand for 10 minutes.

4. Chop and prepare all vegetables and lettuce. Assemble all ingredients and top with dressing.
