Fluffy Vegan Pancakes



Ingredients:
  • 1 cup flour
  • 1 teaspoon baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons oil
  • 1 cup almond milk
  • 1 teaspoon pure vanilla extract
Method:

Combine all ingredients in a large mixing bowl. In a large non-stick skillet, add a small bit of oil. Use a 1/2 cup measuring spoon to scoop some batter into the pan. I use the same amount each time for perfectly round pancakes that are the same size. Cook on one side until small bubbles form at the top of the pancake, about 3-5 minutes. Flip the pancake and finish cooking for another 3 minutes.

Variations

Oatmeal and brown sugar pancakes:
Add in 1/2 cup oats, 1 teaspoon of cinnamon. Substitute the 3 tablespoons white sugar for brown sugar.

Mixed Berry Pancakes:
Add in 1 cup of frozen(and defrosted) or fresh mixed berries.
