This recipe is an unbelievably delicious way to use up those leftovers. This sandwich uses my recipe for Vegan Spinach Artichoke Dip. What could be better than a healthy, cruelty-free, and EASY lunch.
Ingredients:
- Vegan Spinach Artichoke Dip
- 2 slices of your favorite vegan sourdough bread
- 2 tbsp of Smart Balance Light butter (or any other vegan butter spread)
Butter both pieces of bread like you would a grilled cheese. Spread the Spinach Artichoke Dip on the bread and grill the sandwich over medium heat. If you have a panini press or sandwich maker, that would be even better! Since I don't have one, I used a regular pan and cooked it the old fashioned way.
